Milk is a significant local and regional food. Did you know milk arrives on store shelves approximately 48 hours after it leaves the dairy farm?9 Illinois farmers grow healthy food for your family and theirs; they take pride in raising safe and wholesome corn, soybeans, pork, beef, fruits, vegetables and more. The Illinois Dept. of Agriculture and the U.S. Dept. of Agriculture inspect food processing facilities to make certain that only wholesome, properly labeled food is available on store shelves. Illinois is also home to a vibrant local and regional food community, serving as national leaders in the production of pumpkins and horseradish. And, Illinois ranks in the top ten for production of asparagus, cauliflower, fresh cut herbs, green peas, lima beans, mustard greens, and snap peas.8 Whether it’s the food at your local grocery store or at the local farmers’ markets, Illinois farmers are working hard to feed all of us. These farmers feed the same food to their own families, so they take their job of providing safe and wholesome food very seriously. This event coordinates participants in schools, gardens, after school programs, and other organizations to all eat an apple at noon on the designated day.
